Instructions

  • If using a juicer: Feed the chopped beets, carrots, celery, and the peeled orange segments through the juicer. Finish by juicing the limes and stirring in the lime juice. Pour the juice into a pitcher or glasses and skip to serving.
  • If using a blender: Place the chopped beets, carrots, celery and 1 cup (240 ml) water in the blender. Blend on high until completely smooth, pausing to scrape down the sides as needed. Use additional water a tablespoon at a time if the mixture is too thick to blend smoothly.
  • Strain (optional): For a lighter, smoother texture, pour the blended mixture through a fine-mesh sieve or nut milk bag into a bowl or pitcher, pressing or squeezing to extract as much liquid as possible. If you prefer a heartier texture with more body, skip straining and keep some pulp.
  • Add citrus and adjust: Stir in the freshly squeezed orange and lime juices. Taste and adjust—add a little more orange juice for sweetness or more lime for tang. If the juice is too intense, dilute with cold water to reach your desired balance and consistency.
  • Serve: Fill glasses with ice, pour the Jugo Vampiro over the ice, and serve immediately for the best color and flavor. Garnish with a lime wheel or celery stalk if desired.
  • Cleanup tip: Rinse blender parts or juicer components promptly to prevent beet stains and make cleaning easier.
