  • 8 slices sourdough bread
  • ¼ cup stone-ground mustard
  • 12 slices turkey
  • 1 green tomato, sliced
  • ½ red onion, thinly sliced
  • 1 cup alfalfa sprouts
  • 1 avocado, sliced
  • 4 deli pickles, sliced
  • ½ large cucumber, sliced
  • 6 slices Havarti cheese
  • 4 large romaine leaves

Instructions

  1. Prepare the herby mayo: in a small bowl, stir together the mayonnaise, chopped mint, dill, cilantro, lemon juice and sea salt until well combined. Taste and adjust salt or lemon as needed.
  2. Spread a generous layer of the herby mayo on one slice of bread and stone-ground mustard on the other slice for each sandwich.
  3. Assemble the sandwich: layer turkey over the mayo, then add a slice of green tomato, a few rings of red onion, about ¼ cup sprouts, sliced avocado, a few pickle slices, cucumber, a slice of Havarti, and a romaine leaf. Close with the mustard-topped bread.
