  • 1 medium banana
  • 1 cup blueberries (fresh or frozen)
  • 3/4 cup unsweetened almond milk (or other milk)
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest (~1/2 lemon)
  • 1 tablespoon melted coconut oil

Dry Ingredients

  • 3 cups old-fashioned rolled oats (gluten-free if desired)
  • 1 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat the oven to 350ºF (175ºC). Line a muffin tin with paper liners or spray well with nonstick cooking spray.
