Ingredients

  • 4 ears of corn, shucked and cleaned
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 3 tablespoons plain nonfat Greek yogurt
  • 2 oz. feta cheese, block
  • 2 tablespoons fresh oregano, chopped
  • 2 tablespoons fresh basil, chopped
  • 1/4 cup red onion, finely diced

Instructions

  1. Preheat your grill or oven to 400ºF (204ºC).
  2. In a small bowl, whisk together the olive oil, dried oregano, dried basil, salt, and pepper until well combined.
  3. Rub each ear of corn generously with the olive oil mixture so the kernels are evenly coated.
  4. Wrap each seasoned ear of corn tightly in aluminum foil, sealing the edges.
  5. Place the foil-wrapped corn on the grill directly over the heat and cook for about 20 minutes, turning every 5 minutes to ensure even cooking. If using an oven, place on a baking sheet and roast for 20 minutes, turning once.
  6. Remove the corn from the heat and let rest for 5 minutes before unwrapping.
  7. While the corn rests, mash the feta and Greek yogurt together in a small bowl until you form a creamy paste. Adjust salt and pepper if needed.
  8. Spread the feta and yogurt mixture over each ear of corn. Top with chopped fresh oregano, basil, and a sprinkle of finely diced red onion. Serve immediately.
