What is a Tostada?

A tostada is a traditional Mexican-style dish that starts with a toasted or fried tortilla as the base. The word “tostada” literally means “toasted,” and it’s typically topped with seasoned protein, beans, fresh vegetables and flavorful sauces. This vegetarian version swaps the meat for a plant-based ground option and piles on veggies and guacamole for a bright, satisfying bite.

How to Make Vegetarian Tostadas

This recipe is straightforward and comes together in five simple steps. Total time is about 30 minutes from start to finish, with roughly 15 minutes active prep and 15 minutes cooking.

Step by Step

  1. Prep the tortillas: Lightly spray both sides of each flour tortilla with olive oil cooking spray or brush with a little oil. Broil or bake them on a sheet pan until golden and crispy, about 30 seconds to 1 minute per side depending on your oven. Watch closely to avoid burning.
  2. Sauté the sweet peppers: Heat 2 teaspoons of olive oil in a skillet over medium-high heat. Add 2 cups sliced mini sweet peppers and season with salt and pepper. Sauté for 2–3 minutes so they stay crisp-tender, then remove from the pan and set aside.
  3. Cook the plant-based ground: Add 1 teaspoon oil to the same pan, then add 1 lb. plant-based ground. Sauté for 2–3 minutes, then stir in 1/2 cup serrano pepper salsa, 1/8 teaspoon salt, and 1 tablespoon chili powder. Continue cooking until well browned and heated through, about 5 minutes.
  4. Assemble the tostadas: Spread about 1 tablespoon of homestyle guacamole on each toasted tortilla. Top each with roughly 1/4 cup of the plant-based ground and 1/4 cup of the sautéed peppers. Add any optional toppings you like.
  5. Serve immediately: Finish with a squeeze of fresh lime, sliced avocado, chopped cilantro and a sprinkle of vegan shredded cheese if desired. Enjoy while the tostadas are crisp.

Optional Toppings and Variations

These tostadas are easy to customize. Try one or more of the following toppings to suit your taste:

  • Fresh lime juice
  • Sliced avocado
  • Chopped cilantro
  • Cotija or shredded cheese (or vegan shredded cheese to keep it plant-based)
  • Greek yogurt or sour cream (or a vegan alternative)
  • Sliced jalapeños for extra heat

Make it Vegan

To keep the tostadas fully vegan, skip dairy toppings like cheese or sour cream, or substitute them with vegan cheese and a plant-based sour cream. The rest of the recipe is already plant-based.

Make it Tacos Instead

If you prefer not to broil tortillas, the same filling works perfectly in soft or hard taco shells. Serve warm tortillas and pile on the plant-based ground, sautéed peppers, guacamole and your favorite toppings for easy tacos.

Meal Prep Tips

These tostadas are meal-prep friendly. Cook the plant-based ground and sauté the mini sweet peppers in advance, store them separately in airtight containers, and broil the tortillas just before serving to keep them crisp. Prepared plant-based ground and peppers will keep 3–5 days refrigerated.
