Baked Pasta with Bursting Cherry Tomatoes and Boursin

Baked Bursting Tomato Boursin Pasta

This Baked Bursting Tomato Boursin Pasta is an effortless, hands-off meal that uses just a few pantry staples. Rather than simmering a sauce on the stove, we roast cherry tomatoes, onion, whole garlic, and creamy Boursin in the oven until everything bursts and melds into a deeply flavored, velvety sauce. Tossed with al dente pasta, it makes a comforting weeknight dinner that’s quick to assemble and impossible not to love.

With busy evenings and little time to spare, this recipe shines because it’s simple: toss the ingredients in a baking dish, roast, boil the pasta, then combine. The result is a rich, luscious sauce that clings to every spiral of fusilli (or your favorite pasta shape) and can easily be customized with extra cheeses, herbs, or proteins.

What’s in Baked Bursting Tomato Boursin Pasta

  • Olive oil: Helps roast the ingredients and adds depth.
  • Tomato paste: A little builds concentrated tomato flavor and body.
  • White onion: Roasted for sweetness and texture.
  • Cherry tomatoes: They roast and burst, releasing bright, fresh juices.
  • Fresh garlic: An entire head—roasting mellows and sweetens the garlic for a mellow, rich flavor.
  • Boursin cheese: Herb-flavored Boursin becomes the creamy backbone of the sauce; any variety works.
  • Fusilli pasta: Spirals hold the sauce beautifully, but rigatoni or penne are great alternatives.

Tasty Swaps and Add-Ins

This dish is very adaptable. Here are some easy ways to change it up depending on what you have on hand or how hearty you want the meal to be.

  • Cheese: If you don’t have Boursin, soft goat cheese or cream cheese mixed with herbs works well. Finish with grated Parmesan or crumbled feta for extra savory notes.
  • Fresh herbs: Stir in or garnish with basil, parsley, or chives. You can also toss a handful of fresh spinach into the hot pasta for color and nutrients.
  • Pasta shapes: Use any pasta you prefer. Fusilli or rigatoni are ideal for catching sauce, but penne, orecchiette, or shells work too.
  • Add protein: For a non-vegetarian version, fold in cooked chicken, shrimp, or sliced sausage after baking.
  • Make it spicy: Add red pepper flakes or diced jalapeño to the roasting dish for a kick.

Top FAQs

Is Boursin cheese gluten-free?

Most Boursin flavors are gluten-free. If you need a completely gluten-free meal, use certified gluten-free pasta and double-check ingredient labels to ensure they meet your dietary needs.

Why not bake the pasta with the sauce?

Cooking pasta separately ensures a better texture. Baking the sauce intensifies the flavors and creates a creamy base; mixing the hot sauce with freshly cooked, al dente pasta keeps the noodles from getting mushy and helps the sauce cling evenly.

How to Store

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, warm gently in the microwave or oven and add a splash of reserved pasta water or broth if the sauce has thickened too much.

Prep: 10 mins | Cook: 30 mins | Total: 40 mins | Servings: 6

Ingredients

  • ¼ cup olive oil
  • 2 tablespoons tomato paste
  • ½ medium white onion, diced
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 10 oz cherry tomatoes
  • 1 head garlic (about 10 cloves)
  • 2 pucks Boursin cheese (any flavor)
  • 8 oz fusilli pasta

For serving

  • Olive oil for drizzling
  • Red pepper flakes, optional
  • Minced fresh chives or other fresh herbs

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In an 8×8-inch (or similar) baking dish, whisk together the olive oil and tomato paste. Trim the tip off the head of garlic so the cloves stay intact. Add the diced onion, salt, pepper, cherry tomatoes, and the garlic head to the dish and toss until everything is coated.
  3. Nestle the two Boursin pucks into the tomato mixture and cover the dish. Bake for 25–30 minutes, until the cheese is browned and the tomatoes have burst.
  4. While the tomatoes bake, bring a large pot of salted water to a boil and cook the pasta until al dente, about 5–7 minutes. Before draining, reserve 1 cup of the starchy pasta water. Drain the pasta and set aside.
  5. Remove the baking dish from the oven. Carefully squeeze the roasted garlic cloves from their skins and mash them along with the roasted tomatoes and onions using a fork until a saucy consistency forms. Stir the melted Boursin into the tomatoes to create a smooth sauce.
  6. Toss the cooked pasta with the Boursin tomato sauce, adding pasta water one tablespoon at a time until the sauce reaches a creamy consistency that coats the noodles.
  7. Finish with a drizzle of olive oil, a sprinkle of red pepper flakes if desired, and minced fresh chives or basil. Serve immediately.

Tips & Notes

  • Garlic & herb Boursin is recommended for maximum flavor, but any soft, herbed cheese will work. Goat cheese can be substituted for a tangier profile.
  • Use only as much reserved pasta water as you need. The starch helps emulsify the sauce and give it a silky texture.
  • If you prefer a heartier meal, add cooked chicken, shrimp, or sliced sausage before tossing with pasta.
