May 2022 – The Details

Read the details carefully so your entry counts. If you have questions, leave them in the comments of this post.

Recipe of the Month

This sriracha chicken salad is a longtime Fit Foodie Finds reader favorite. Many of you have made it again and again — and for good reason. The combination of spicy chicken, bright greens, and a creamy green goddess dressing delivers bold flavor while staying balanced and fresh. If you haven’t tried it yet, you’re in for a real treat.

Why you’ll love this recipe

Crispy chicken: The chicken gets a crunchy oat-flour breading and a sriracha-honey coating that crisps up beautifully without deep frying.

Generous greens: This salad highlights lots of fresh greens and crunchy vegetables for satisfying texture and color.

Homemade dressing: A Greek-style green goddess made with Greek yogurt and fresh herbs adds tang and cooling contrast to the heat of the sriracha.

All About Sriracha Chicken Salad

If you love sriracha and crispy chicken, this salad delivers both in a fresh, healthy way. The sriracha-coated chicken provides heat and texture, while the green goddess dressing offers a cooling, herbaceous contrast that complements the spice.

It’s a colorful, well-balanced meal that works for a quick weeknight dinner or a casual outdoor lunch when the weather is nice. The recipe is flexible: tweak the greens or toppings to suit your taste and pantry.

Ingredients You’ll Need

The recipe is built from three main components: the chicken, the greens and toppings, and the homemade dressing.

Chicken

The chicken uses boneless chicken breasts tossed in a sriracha and honey glaze, then coated in an oat flour and egg mixture that crisps up in the pan. The result is spicy, sweet, and satisfyingly crunchy slices of chicken.

Greens

Use a spring mix or your preferred salad greens as the foundation. This recipe pairs the greens with sliced radishes and diced red onion for crunch and freshness. Additional toppings like avocado and blue cheese crumbles add creaminess and savory depth.

Homemade Green Goddess Dressing

Greek yogurt forms the base of the dressing, lending tang and a cooling effect against the sriracha. Blend yogurt with fresh herbs, lemon juice, and garlic to create a vibrant, creamy green goddess dressing that brings the whole salad together.

Tools You’ll Need

Standard kitchen tools will do the job: a skillet for the chicken, a bowl for tossing the salad, and a blender or food processor for the dressing. A sharp knife and cutting board make prep faster and safer.

Recipe Tips

  • Meal prep friendly: Prepare the components ahead of time, but wait to dress the salad until right before eating to keep the greens crisp.
  • Swap the greens: If you don’t have spring mix, arugula or romaine work well. No radishes? Try sliced bell peppers or carrots for crunch.
  • Chicken alternatives: You can substitute skinless chicken thighs or tenderloins if you prefer them over chicken breasts.
  • Cheese swaps: Not a fan of blue cheese? Feta or goat cheese make excellent alternatives that still deliver tang and creaminess.
