  • 1.5 cups rolled oats, lightly pulverized (leave some texture)
  • 1 cup white whole wheat flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1/2 cup white chocolate chips
  • 1/2 cup dried cranberries
Optional Toppings
  • Extra white chocolate chips
  • Sea salt

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a baking sheet with nonstick spray or parchment paper.
  2. Cut the cold butter into tablespoon pieces and place in a mixer or large bowl.
  3. Add the brown sugar and cream together on low/medium until smooth and free of lumps, about 4–5 minutes.
  4. While creaming the butter, pulse the rolled oats in a food processor so they are partly pulverized—some texture should remain. Transfer to a large bowl.
  5. Whisk in the white whole wheat flour, baking powder, cinnamon, and salt with the oats.
  6. Add the egg and vanilla to the creamed butter and mix on medium until combined, taking care not to overmix.
  7. Gradually add the dry ingredients to the wet and mix until a slightly sticky dough forms. Scrape the bowl as needed.
  8. Fold in the white chocolate chips and dried cranberries until evenly distributed.
  9. Use a 1.5-tablespoon scoop (or tablespoon) to portion dough, roll into balls, and slightly flatten. Place on the baking sheet, spacing evenly. This recipe yields about 16 cookies.
  10. Optionally press a few extra white chocolate chips on top and sprinkle with a pinch of sea salt.
  11. Bake at 350°F for 12–14 minutes, until the bottoms are golden brown.
