This Lychee Passionfruit Martini blends vodka with lychee juice and passionfruit pulp for a cocktail that’s floral, tropical, and strikingly balanced. A touch of Cointreau and fresh lime brightens the flavor, while a light flaky sea salt rim and canned whole lychees add a refined finish. Ingredients

For the Martini:

  • 2 oz vodka
  • 1 oz lychee juice, from a can of lychees
  • 1 oz frozen passionfruit pulp, thawed
  • ½ oz Cointreau or triple sec
  • ½ oz fresh lime juice
  • ¼ oz lychee simple syrup, see simple syrup section
  • 2 whole lychees from the can, for garnish
  • Ice

For the Lychee Simple Syrup:

  • ¼ cup lychee juice, from the can
  • ¼ cup sugar

For the Rim:

  • Flaky sea salt, for a light rim
  • Honey or lime wedge, to help the salt adhere

Instructions

  • Prepare the lychee simple syrup first. In a small saucepan combine ¼ cup lychee juice and ¼ cup sugar over medium heat. Stir gently until the sugar dissolves completely, about 2 minutes. Remove from heat and let cool to room temperature. This syrup adds a floral lychee sweetness without diluting the cocktail.
  • Chill your martini or coupe glass in the freezer for at least 5 minutes. Before pouring the drink, rim the glass lightly: run a lime wedge around the rim or brush a thin layer of honey, then dip the edge into flaky sea salt for a delicate, elegant rim.
  • Build the cocktail in a shaker filled with fresh ice. Add 2 oz vodka, 1 oz lychee juice, 1 oz thawed passionfruit pulp, ½ oz Cointreau (or triple sec), ½ oz fresh lime juice, and ¼ oz lychee simple syrup. Secure the shaker and shake vigorously for 20–25 seconds. A strong shake chills the drink and emulsifies the passionfruit pulp.
  • Double strain the cocktail through a fine-mesh strainer into the chilled glass to remove passionfruit seeds and any ice shards, producing a smooth, clean pour. Thread two whole canned lychees onto a cocktail pick and rest it across the glass rim as a garnish. Serve immediately while cold.
