Ingredients
For the Chia Pudding Base:

- ⅔ cup chia seeds
- 3 scoops vanilla protein powder about 75–90 g

- 1½ tsp ground turmeric
- ½ tsp ground cinnamon
- ¼ tsp ground ginger
- ¼ tsp vanilla extract

For the Mango Layer:
- 3 large ripe mangoes peeled and diced — half blended into a purée, half reserved for topping
- 1 tbsp fresh lime juice
- 2–4 tbsp agave or maple syrup, to taste

- Reserved fresh mango chunks
- Coconut flakes
- Optional: toasted nuts, granola, or seeds for crunch
Instructions
- In a large bowl, whisk together the almond or coconut milk, vanilla protein powder, maple syrup (or agave), ground turmeric, cinnamon, ginger, vanilla extract, black pepper, and a pinch of salt. Whisk until the protein powder is fully dissolved and the mixture is smooth with no visible clumps.
- Add the chia seeds to the milk mixture and whisk again to evenly distribute them. Let the mixture rest at room temperature for 10 minutes, then whisk vigorously a second time. This breaks up any small gelled clumps and helps create a consistently smooth texture.
- Cover the bowl and refrigerate for at least 6 hours, preferably overnight. Chilling allows the chia seeds to absorb liquid and thicken into a creamy pudding.
- While the pudding chills, prepare the mango purée. Blend half of the diced mango with the lime juice and 2–4 tablespoons of agave or maple syrup (adjust sweetness to taste) until completely smooth. Keep the remaining mango chunks refrigerated for topping.
- When the pudding is fully set, stir it well to loosen the texture. If it seems too thick, stir in a tablespoon of almond milk at a time until you reach your preferred consistency. If it’s too loose, return it to the fridge for another hour.
- To serve, layer chia pudding and mango purée in jars or bowls: start with a spoonful of pudding, add a layer of mango purée, repeat, and finish with fresh mango chunks and a sprinkle of coconut flakes. Add optional crunchy toppings like toasted nuts or granola if desired.
Notes & Tips
- Overnight chilling yields the best texture. Six hours will work in a pinch, but a full night in the fridge allows the chia seeds to hydrate and thicken evenly.
- A small pinch of black pepper helps your body absorb compounds in turmeric more effectively; it doesn’t alter the flavor noticeably but supports the turmeric’s benefits.
- Make the mango purée the morning you serve it for the brightest color and flavor. Mango purée can darken slightly if made too far in advance.
- Protein powder: vanilla works best here, but you can substitute with plain collagen powder or omit it and use a touch more chia for texture if you prefer fewer additives.
