  • 4.5 oz can green chiles, drained
  • 3 tablespoons tomato paste
  • 15 oz can pinto beans, rinsed and drained
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 tablespoon garlic powder
  • 1/8 teaspoon salt, or more to taste
  • 1/2 cup nonfat Greek yogurt
  • 2/3 cup shredded Mexican cheddar cheese, divided (about 1/3 cup mixed in and 1/3 cup for topping)

Instructions

  1. Preheat the oven to 400°F (200°C). Spray a 9×9-inch baking dish with cooking spray or lightly oil a 10-inch cast-iron skillet.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the diced onion and minced garlic and sauté until the onion is translucent and fragrant, 2–3 minutes.
  3. Add the ground turkey and cook, breaking it up with a spoon, until fully browned, about 5–8 minutes.
  4. Lower the heat to medium-low and stir in the green chiles, tomato paste, rinsed pinto beans, chili powder, cumin, paprika, garlic powder, and salt. Cook for 2–3 minutes to meld the flavors.
  5. Remove from heat and stir in the Greek yogurt and 1/3 cup of the shredded cheese until combined. If you prefer a looser consistency, add a few tablespoons of water.
  6. Transfer the mixture to the prepared baking dish or skillet. Sprinkle the remaining 1/3 cup of cheese evenly over the top.
