All About Banana Bread Muffins
Ingredients You’ll Need
Dry Ingredients
- All-purpose flour: White whole wheat can be substituted, though gluten-free flour has not been tested for this recipe.
- Baking soda: Essential for rise and texture—don’t omit it.
- Kosher salt: A pinch of salt balances the sweetness and enhances flavor.
Wet Ingredients
- Light brown sugar: Provides classic banana bread sweetness; coconut sugar is an acceptable substitute.
- Unsalted butter: Use room-temperature butter so it creams easily.
- Vanilla extract: A small amount brightens the flavor.
- Mashed ripe bananas: Very ripe bananas give the best banana flavor and sweetness.
- Eggs: Use large eggs for consistent results.
- Maple syrup: Adds depth and a subtle, rich sweetness.
- Greek yogurt: Reacts with baking soda to yield moist, fluffy muffins.
- Unsweetened almond milk: Thins the batter slightly for the right consistency.

A few tips
Measure the mashed banana: Mash the bananas first, then measure so you use the right amount—banana size varies and affects the batter.
Make them your own: Mix in chocolate chips, chopped nuts, or berries to suit your taste.
Substitute applesauce in a pinch: If you don’t have bananas, use 1 cup applesauce in place of 3 mashed bananas. The texture and flavor will differ but still work well.
