Recipe of the Month: Honey Peanut Butter Scotcheroos

Scotcheroos are a classic for a reason: the blend of peanut butter, butterscotch, and chocolate is irresistible. These bars are ideal for picnics, parties, potlucks, or any time you want a memorable treat. Our version uses honey instead of corn syrup and omits white sugar, giving you a cleaner, more natural take on the original without sacrificing flavor.

Ingredients You’ll Need

  • Peanut butter: Use a smooth, all-natural peanut butter for the best texture in the bars.
  • Honey: Honey provides both sweetness and the sticky binding your bars need.
  • Rice crispies: Standard rice cereal or brown rice cereal both work well.
  • Chocolate chips: Semi-sweet or dark chocolate make a great finishing layer.
  • Butterscotch chips: These add the classic scotcheroo flavor everyone loves.
  • Coconut oil: A small amount helps the chocolate topping set with a pleasant, slightly softer bite.

Many recipes work best with a runny, natural peanut butter. If you prefer a specific brand, use what you know behaves well when warm and mixed into cereals and sugars.

Tools You’ll Need

Basic tools like a saucepan, spatula, baking pan, and measuring cups are all that’s required. For bite-sized treats, a tablespoon cookie scoop helps form even pieces.

Tips

Serve a crowd: Cut into large squares for a hearty dessert or into small bites to serve many guests.

Freeze for convenience: Store bite-sized pieces in the freezer so you can quickly assemble a platter whenever you need a ready-made dessert.

Turn these bars into balls

If you prefer hand-held treats, roll the mixture into balls and dip them in melted chocolate for a fun variation. Steps:

  1. Scoop the mixed rice-and-peanut-butter base with a tablespoon cookie scoop.
  2. Shape the scoop into a ball; a quick wetting of your hands can help.
  3. Dip each ball in the melted chocolate-butterscotch topping and set on parchment.
  4. Freeze for about an hour to set the coating.

Wednesday, May 31, 2023 — Winners are randomly selected and announced on the blog and social media.

The Prize

Two participants will each win a $100 gift card. Winners are chosen randomly from all eligible comments posted between May 2 and May 30, 2023. Announcement will appear on the last Wednesday of the month.

Charity of the Month

NAMI Minnesota

Each month we highlight a charity to support. For May 2023 we are supporting the National Alliance on Mental Illness Minnesota (NAMI Minnesota). We will match and double the giveaway amount to donate $400 to NAMI Minnesota to help fund their education, support, and advocacy work.

NAMI Minnesota is a nonprofit organization focused on improving the lives of people with mental illness and their families by promoting community services, changing public attitudes, improving access to care, and supporting long-term recovery.
