All About Oatmeal Zucchini Cookies
These oatmeal zucchini cookies are a tasty variation of a flourless monster cookie. Swap candy pieces for shredded zucchini and you get a cookie that contains a serving of vegetables without sacrificing flavor. They work well with zucchini straight from the garden or zucchini you froze earlier in the season.
We recommend making a double batch and freezing half so you always have a quick homemade snack or breakfast option on hand.
Ingredients You’ll Need
- Zucchini – Two medium zucchinis yield about 1 cup of shredded zucchini.
- Unsalted butter – We use unsalted butter for consistent salt control.
- Light brown sugar – Adds depth and moisture to the cookies.
- Maple syrup – A small amount enhances sweetness and flavor.
- Egg – Use a large egg for best texture and binding.
- Cashew butter – A soft, drippy cashew butter adds richness; avoid overly dry nut butters.
- Vanilla extract – Brings depth to the cookie flavor.
- Salt – Small amounts of salt amplify all other flavors.
- Quick-cooking oats – Quick oats hold together better than rolled oats in this recipe.
- Baking soda – Provides lift for the cookies.
- Semi-sweet chocolate chips – Chocolate pairs beautifully with cashew butter and zucchini.
Tools You’ll Need
Basic baking equipment is sufficient: a mixing bowl, grater for shredding zucchini, a tea towel or cheesecloth for squeezing moisture, measuring cups and spoons, a baking sheet, and an oven. A cookie scoop makes portioning quick and consistent.
Top Recipe Tip
To achieve perfectly chewy, soft zucchini cookies, it’s essential to remove excess moisture from the shredded zucchini. After shredding, let the zucchini sit in a lined bowl briefly so liquid can separate, then use a clean tea towel to squeeze out as much moisture as possible. This prevents the dough from becoming too wet and the cookies from turning mushy.
