How to Make Authentic Sticky Rice at Home

Pachee’s Sticky Rice

From Pachee: Growing up, my father often gave us sticky rice as a snack. I remember him rolling warm rice between his hands and blowing on it to cool it down before passing the rice along. Those little rice balls carried comfort and family tradition. As I got older I made the same simple gesture for my nieces and nephews while they played at grandma and grandpa’s house. Sticky rice is a year-round staple in our home because it complements so many flavors—sweet or savory—and brings people together.

What is sticky rice?

Sticky rice (also called glutinous or sweet rice) is a highly glutinous variety of rice grown primarily in parts of Asia. Its unique texture makes it excellent for shaping into balls, serving alongside saucy dishes, or pairing with desserts. When prepared correctly, sticky rice is tender and pleasantly cohesive without being mushy.

What type of rice should I use?

Pachee recommends using sweet rice for this recipe—Apple Brand is one example. Sweet rice (glutinous rice) is widely available at Asian grocery stores and many major grocery retailers. Make sure you use rice labeled for sticky or glutinous rice rather than standard long-grain or jasmine rice.

Ingredients

  • Sweet rice (glutinous rice), 3 cups
  • Water

Tools

  • Bamboo steaming basket (or equivalent steaming basket)
  • Steamer pot or any pot that allows a basket to sit above boiling water
  • Strainer

Note on equipment: A bamboo basket and a steam pot is traditional and works very well, but you can use any pot and steamer basket as long as the basket does not touch the water while the rice steams. The rice should be steamed by the rising steam, not boiled in water.

How to Make Sticky Rice

For quick reference: rinse, soak, briefly heat in hot water, drain, then steam. Full details follow below.

1. Rinse the rice

Place 3 cups of sweet rice in a large bowl. Rinse under warm water 2–4 times, swirling the rice and draining each time to remove excess surface starch. This prevents the rice from becoming gummy and helps it cook evenly.

2. Soak the rice

Refill the bowl with warm water and let the rice soak for 45 minutes to 1 hour. Soaking hydrates the grains so they steam more evenly and develop the proper tender texture.

A few minutes before the soaking time is complete, bring a pot of water to a rolling boil. The amount should be enough to submerge the rice when you briefly place it in the hot water in the next step.

3. Strain the rice

When the water comes to a boil, transfer the soaked rice to a strainer and set aside so it drains well. If you don’t have a strainer you can carefully pour off the soaking water.

4. Brief hot-water treatment

With the pot at a rolling boil, turn the heat off immediately. Carefully add the drained rice into the pot of hot water and stir gently for about 3 minutes. This short exposure to hot water softens the rice without making it mushy. Do not leave the rice in the hot water for too long.

  • This step helps create a softer, more pleasant texture when steamed.
  • The rice is ready when a grain can be split easily in half with light pressure.

5. Drain again

Carefully strain the rice a second time and set it aside while you prepare the steamer. Make sure the rice is well drained before placing it in the steaming basket.

6. Steam the rice

Add water to the steamer pot and set the bamboo basket on top so the water sits below the basket. Turn the heat to high to bring the water to a simmer or low boil. It’s crucial that the water does not touch the bottom of the basket—steaming, not boiling, produces the right texture.

Transfer the drained rice to the basket, spread it evenly, and cover with a tight-fitting lid to trap the steam. Steam for about 30 minutes, though time may vary depending on the quantity of rice. Check once or twice to ensure the rice isn’t overcooking. When finished, the grains should be tender, cohesive, and slightly glossy.

Tips for Perfect Sticky Rice

Always rinse the rice: Rinsing removes excess surface starch so the grains steam evenly and don’t clump excessively.

Soak the rice: Soaking softens the grains and ensures an even, tender texture during steaming.

Prevent sticking: Lightly spray or rub a small amount of butter or oil on the bottom of the bamboo basket before adding rice to reduce sticking and make cleanup easier.

Keep water below the basket: If the water touches the basket, the rice can become waterlogged and mushy. The basket should sit above the water so steam does the cooking.

What to Serve with Sticky Rice

Sticky rice works wonderfully with plenty of dishes. Pachee often serves it with Pad Krapow (Thai basil stir fry). Other excellent pairings include:

Storage

Store cooled sticky rice in an airtight container in the refrigerator for up to 3 days.

To reheat: Place the rice in a microwave-safe container and heat until warm, or steam briefly until heated through. Steaming helps restore a better texture than microwaving alone.

  8. Serve warm and enjoy.

  • Lightly grease the bottom of the bamboo basket with butter or oil to prevent sticking and make cleanup easier.
  • Always ensure the water level in the pot stays below the basket to prevent mushy rice.
