  • 2 — 4 oz. boneless, skinless chicken breasts
  • 4 slices lemon
  • 1 tablespoon olive oil
  • 1/8 teaspoon cracked black pepper
  • 1/8 teaspoon sea salt
  • 1 sprig rosemary

Instructions

  1. Fill a large stock pot or container with water and attach your sous vide circulator. Set the temperature to 145ºF and allow the bath to come to temperature. Make sure you have enough water to fully submerge the bagged chicken.
  2. Season the chicken breasts with salt and pepper. Place each breast in a vacuum-seal bag or a sturdy resealable bag. Add lemon slices, olive oil and a sprig of rosemary so the chicken is lightly coated and aromatic.
  3. Remove as much air as possible from the bag (vacuum seal or water displacement method with a Ziplock) so the bag will sink and remain submerged. Clip or weight the bag if necessary.
  4. Cook the chicken in the 145ºF water bath for 1.5–2 hours. The texture will be tender and moist.
  5. When finished, remove the bag from the bath and take the chicken out. Serve immediately, or quickly sear the breasts in a hot skillet with 1–2 tablespoons oil for 1–2 minutes per side to develop a golden crust.
