Ingredients
For the Martini:

Prepare the lychee simple syrup first. In a small saucepan combine ¼ cup lychee juice and ¼ cup sugar over medium heat. Stir gently until the sugar dissolves completely, about 2 minutes. Remove from heat and let cool to room temperature. This syrup adds a floral lychee sweetness without diluting the cocktail.

Chill your martini or coupe glass in the freezer for at least 5 minutes. Before pouring the drink, rim the glass lightly: run a lime wedge around the rim or brush a thin layer of honey, then dip the edge into flaky sea salt for a delicate, elegant rim.

Add 2 oz vodka, 1 oz lychee juice, 1 oz thawed passionfruit pulp, ½ oz Cointreau (or triple sec), ½ oz fresh lime juice, and ¼ oz lychee simple syrup.
