This protein cookie dough bark pairs a chewy oatmeal peanut butter cookie-dough layer with a glossy homemade magic-shell chocolate topping and a generous sprinkle of monster-style trail mix. Each chunk delivers about 14 g of protein, making this a satisfying, protein-forward sweet treat you can keep in the freezer for quick snacking.
Store the bark frozen and break off a piece whenever you want a high-protein dessert or an energy-boosting snack.

We’ve made protein truffles, brownies, and fudgesicles before, but this is our first cookie-dough bark variation — a fun, break-apart treat that stores beautifully in the freezer and is perfect for meal-prep snack boxes or for sharing at gatherings.
Why we love this bark:
- Minimal prep: You only need one bowl to mix the cookie-dough layer and another small bowl to melt the chocolate. No food processor required.
- High in protein: Roughly 14 g of protein per chunk makes this a great sweet option when you want something more filling than a typical dessert.
- Customizable: Use whatever small candies, trail mix, or sprinkles you have on hand. Bite-sized candies or chopped candy bars work especially well as a topping.
Top Tips from the Kitchen
Bark thickness: The cookie-dough layer can be rolled thin (about 1/4 inch) or thicker (up to 1/2 inch). Thicker dough means you may need less chocolate on top; thinner dough needs more coverage for a balanced bite.
Peanut butter consistency: The amount of water you add depends on how runny your peanut butter is. Creamy processed brands often require more water, while all-natural, drippy peanut butter needs less. Both types work — just adjust the water so the dough holds together when formed into a ball.
Topping ideas: Monster trail mix is our go-to, but other small candies, chopped nuts, raisins, or sprinkles all make excellent alternatives. Get creative with seasonal candy for holiday versions.

Other High-Protein Sweet Treats
If you enjoy this bark, try other high-protein desserts like peanut butter protein balls, protein puppy chow, protein truffles, blueberry protein donuts, or protein banana bread. These recipes follow the same idea: satisfying sweetness combined with extra protein to keep you fuller longer.
Storage
Store the cookie dough bark in an airtight container in the freezer for up to 3 months. Break the bark into chunks and keep them in a freezer-safe bag so you can grab a piece or two when you want a quick snack.
You can keep the bark in the refrigerator for up to 1 week, but it may soften and lose some shape. For best texture and convenience, freezing is recommended.

Ingredients
Protein Peanut Butter Layer
- 1 cup drippy, all-natural peanut butter
- 1/2 cup vanilla protein powder (we used a plant-based option)
- 1 cup quick-cooking oats
- 3 tablespoons maple syrup
- 1/4 cup water, plus more as needed
Magic Shell
- 1/2 cup semi-sweet chocolate chips
- 2 tablespoons coconut oil
Topping
- 1/2 cup monster cookie trail mix or a similar mix of small candies, nuts, and chocolate pieces
Instructions
- Make the cookie-dough base: In a bowl, combine the peanut butter, protein powder, oats, maple syrup, and water. Mix with a spoon and, if needed, use your hands to fully combine. The dough should hold together when you form it into a ball. Add a little more water if the dough is too dry.
- Form and roll out: Shape the mixture into a large ball, place it on a sheet of parchment paper, flatten it with your hands, and cover with a second piece of parchment. Use a rolling pin to roll the dough to about 1/4 inch thick. Transfer the parchment and dough to a flat surface and freeze briefly to firm it up.
- Prepare the magic shell: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 20-second increments, stirring after each, until the chocolate is smooth and glossy.
- Assemble: Remove the dough from the freezer and pour the melted chocolate over the top. Spread it into an even layer with a spatula.
- Add toppings and freeze: Sprinkle the monster trail mix (or your chosen toppings) over the chocolate, then return the bark to the freezer. Chill for at least 15 minutes or until the chocolate is fully set.
- Serve or store: Break the bark into pieces and enjoy immediately, or store the pieces in a freezer-safe container for easy grab-and-go treats.
Tips & Notes
- Add water sparingly until the dough holds together; different peanut butters absorb moisture differently.
- The amount of chocolate needed depends on how thin you roll the dough — thinner dough requires more chocolate to cover the surface.
- Substitute any small candies, chopped bars, nuts, or sprinkles for the trail mix to match your taste and the season.
