Ingredients

  • 3 tablespoons olive oil, divided
  • 12 oz sliced chicken sausage
  • ½ medium yellow onion, minced
  • ¼ teaspoon salt
  • 3 garlic cloves, minced
  • 1 tablespoon Italian seasoning
  • 16 oz gnocchi
  • 2 cups chicken broth
  • 2 cups fresh spinach, roughly chopped
  • ¾ cup blended cottage cheese

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the sliced sausage and minced onion, season with salt, and cook about 5 minutes until the onions are soft and translucent.
  2. Add the minced garlic and Italian seasoning, cook another minute until fragrant. Remove the sausage and onion mixture from the pan and set aside.
  3. Return the pan to medium heat, add the remaining olive oil and the gnocchi. Cook for about 10 minutes, stirring often, until the gnocchi develop a light golden crisp on the outside. If the gnocchi start to stick, add an extra tablespoon of olive oil.
