Ingredients

Dough

  • 1 1/4 cups all-purpose flour
  • 1/2 tablespoon light brown sugar
  • 1/2 teaspoon sea salt
  • 1/4 cup unsalted butter, cold
  • 1/4 cup 4% blended cottage cheese
  • 2 tablespoons ice water

Other Ingredients

  • 1 small potato, sliced into 1/4-inch rounds
  • 1 teaspoon olive oil
  • 1/4 lb breakfast sausage
  • 2 teaspoons maple syrup (optional, for sausage)
  • 1/2 red bell pepper, diced
  • 1/4 cup chopped white onion
  • 2 oz shredded cheddar cheese
  • 4 large eggs

Instructions

  1. Preheat the oven to 350°F. Place the potato rounds in a bowl and cover with water; set aside to remove some surface starch while you prepare the dough.
