Wet
- 2 large eggs
- 1/4 cup maple syrup
- 1/3 cup molasses
- 1 cup unsweetened applesauce
- 1/4 cup unsweetened almond milk (or other milk)
- 1 teaspoon vanilla extract
- 1/4 cup melted coconut oil (or other baking oil)
Lightened-Up Cream Cheese Frosting
- 1/2 cup fat-free cream cheese, room temperature
- 1/2 cup plain nonfat Greek yogurt, almost room temperature
- 2 tablespoons maple syrup
Instructions
- Preheat the oven to 350°F (175°C). Spray an 8×8-inch pan with nonstick spray or grease it well.
- In a large bowl, whisk together all dry ingredients until evenly combined. Set aside.
- In a separate bowl, combine the eggs, maple syrup, molasses, applesauce, almond milk, and vanilla. Whisk until smooth.
- Slowly add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the melted coconut oil gently. Avoid overmixing to keep the loaf tender.
- Pour the batter into the prepared pan and bake at 350°F for 30 minutes. Check the loaf at 30 minutes and, if the sides are browning too fast, tent with foil.
- Continue baking another 10–15 minutes, or until a toothpick inserted in the center comes out clean and the loaf is set.
- While the loaf bakes, prepare the frosting: beat room-temperature cream cheese, nearly room-temperature Greek yogurt, and maple syrup until smooth. Ensure the yogurt isn’t too cold to prevent clumping.
- Allow the gingerbread to cool completely before spreading the frosting. Garnish with a dusting of cinnamon, chopped nuts, or crushed cookies as desired.
