How to make Tres Leches Baked Oatmeal

1. Prepare & preheat

Preheat your oven to 350ºF and line an 8×8-inch baking dish with parchment paper for easy removal.

2. Combine dry ingredients

In a large bowl, whisk together the quick-cooking oats, all-purpose flour, baking powder, ground cinnamon, and salt until evenly combined.

3. Mix wet ingredients

In a separate bowl, mash the banana and whisk in the eggs, vanilla extract, maple syrup, and oat milk. Add the dry ingredients to the wet mixture and stir until just combined.

4. Bake

Pour the batter into the prepared baking dish and bake at 350ºF for about 30 minutes, or until the top is golden and a toothpick in the center comes out mostly clean. If the center needs more time, tent with foil and bake 5 additional minutes.

5. Make the tres leches sauce

While the bake is cooling, combine evaporated milk, 2% milk, oat milk, maple syrup, and ground cinnamon in a small saucepan. Warm gently over medium heat until it reaches a simmer, then remove from heat. Do not pour the sauce over the bake until ready to serve to avoid sogginess.

6. Slice and serve
