Elote, or Mexican street corn, is corn on the cob topped with a creamy mixture—traditionally mayonnaise and/or crema—plus cheese, chili powder, and lime. The blend of tangy, salty, and spicy elements elevates simple corn into a bright, indulgent treat. This air fryer adaptation keeps those familiar flavors while simplifying the cooking process.

How to Make Air Fryer Elote (4 Easy Steps)

1. Season the Corn

Preheat your air fryer to 350ºF (175ºC). Drizzle 4 ears of shucked corn with 1 tablespoon olive oil and rub it in with your hands. Sprinkle evenly with ½ teaspoon salt and ½ teaspoon black pepper. If you prefer not to rub by hand, place the corn and oil in a large resealable bag, add the salt and pepper, seal, and shake to coat.

2. Cook the Corn

Add 1 tablespoon of olive oil to the bottom of the air fryer basket to prevent sticking. Arrange the cobs in a single layer and air fry for about 10 minutes, turning once halfway through, until the kernels are tender and slightly browned in spots.

3. Make the Elote Sauce

While the corn cooks, combine the sauce ingredients in a bowl: ½ cup plain Greek yogurt, 2 tablespoons mayo, 2 ounces crumbled cotija, 1 tablespoon fresh lime juice, and 1 tablespoon lime zest.   • 4 ears of corn on the cob, shucked and cleaned
  • 2 tablespoons olive oil, divided
  • 1/2 teaspoon salt, divided

  • 2 tablespoons mayonnaise
  • 2 oz crumbled cotija cheese, plus extra for garnish
  • 1 tablespoon fresh lime juice
  • 1 tablespoon lime zest

Instructions

  1. Preheat the air fryer to 350ºF. Drizzle 1 tablespoon olive oil over the corn and rub to coat. Season with 1/2 teaspoon salt and 1/2 teaspoon pepper.
