All About Street Corn Salad

Street Corn Salad draws on classic Mexican street corn flavors—grilled or sautéed corn, ripe tomatoes, onion, fresh cilantro, and a creamy cotija-yogurt sauce finished with lime. The result is smoky, tangy, and delightfully crunchy.

Ingredients You’ll Need

  • Corn – Fresh grilled corn is best for texture and char, but thawed frozen corn works in a pinch. Remove excess moisture from frozen corn before using.
  • Cotija cheese – Crumbled cotija blends into a creamy, salty sauce. Use pre-crumbled cotija or crumble a block yourself.
  • Spices – A mix like chili powder, cumin, garlic powder, salt, and pepper brings warmth and depth.
  • Tomatoes – Cherry or grape tomatoes halved work well; you can also dice larger tomatoes.
  • Red onion – Finely diced for a sharp, crunchy contrast; omit or reduce if you prefer a milder bite.
  • Cilantro – Adds classic freshness; substitute arugula or omit if you don’t enjoy cilantro.

How to Cook Corn for Street Corn Salad

Cooking the corn is the most time-intensive step. Choose grilling for smoky char or sautéing for a quick stovetop option. After cooking, combine the corn with the other ingredients and the cotija sauce.

Grilled Ears of Corn

Brush 6 ears of corn with oil and sprinkle with the spice blend. Wrap each ear in foil and grill at about 400ºF for 20–25 minutes, turning as needed. Let cool slightly, then cut the kernels off the cob.

Sautéed Corn Kernels

Cut kernels from the cob or thaw frozen corn and pat dry. Heat a large skillet over medium-high heat with a little avocado or neutral oil. Add corn and spices, then cook until the kernels develop golden brown or charred spots for maximum flavor.

Recipe Tips

Char the corn: Browning or light charring adds smoky depth to the salad.

Cut uniformly: Dice vegetables to similar bite-sized pieces so each forkful has balanced texture and flavor.

Charity of the Month

TRANS YOUTH EQUALITY FOUNDATION

Each month we support a different charity. For April 2022 we are donating to the Trans Youth Equality Foundation to show support for transgender and gender non-conforming youth and their families. We believe every child deserves to grow up supported and loved.

We will double the giveaway match and donate $400 to the Trans Youth Equality Foundation this month. The foundation provides education, advocacy, and support while partnering with families, educators, and service providers to foster a caring, safe environment for transgender children.
