Kiwi Agua Fresca is a bright, naturally colored refreshment made from ripe kiwis, fresh lime juice, a touch of sweetener, and cold water. Ingredients
- 8 ripe kiwis, peeled and chopped
- 6 cups cold water
- ½–¾ cup sugar, adjust to taste; honey or agave can be substituted
- Juice of 2 limes
- 1 tbsp chia seeds, optional

Place the peeled and chopped kiwis in a blender with 2 cups of cold water, the sugar, and the fresh lime juice. Blend briefly — about 8–10 seconds — until the mixture is smooth but not overprocessed. A short blend preserves the vibrant green color and prevents the tiny kiwi seeds from breaking down excessively.

Pour the blended kiwi mixture through a fine-mesh sieve into a clean pitcher to remove excess pulp and any broken seeds. Use the back of a spoon to press the pulp and extract as much liquid as possible for a bright, smooth drink.

Add the remaining 4 cups of cold water to the pitcher and stir to combine. If using chia seeds, stir them in now. The chia will swell as the drink chills, adding body and a pleasant, tapioca-like texture.

Refrigerate the pitcher for 15–20 minutes to let the flavors meld and let chia seeds hydrate fully. Before serving, give the agua fresca a good stir. Serve over ice and garnish each glass with fresh kiwi slices or a lime wheel.
Notes & Tips
- Choose ripe kiwis – Ripe kiwis are softer, sweeter, and more aromatic. Slightly wrinkled skin can indicate ripeness. Using ripe fruit gives the agua fresca better natural sweetness and flavor.
- Don’t overblend – Blend only until smooth. Overblending can break down seeds and plant cells, producing bitterness and a duller color. Short pulses keep the bright, fresh character of the fruit.
- Strain for a finer texture – If you prefer a smoother, more refined drink, strain the blended mixture through a fine-mesh sieve. This removes excess pulp and most seeds while retaining flavor and color.
- Adjust sweetness to taste – Start with ½ cup sugar, then taste and add up to ¾ cup if needed. If your kiwis are especially sweet, you may need less. Honey or agave are good alternatives to granulated sugar for different flavor profiles.
- Chia optional – Chia seeds add texture and a mild nutty note. If you don’t like the gelled texture, omit them. If using, stir them in before chilling so they have time to absorb liquid.
- Flavor variations – Add a handful of fresh mint leaves while blending for a minty twist, or substitute part of the water with sparkling water just before serving for a fizzy version.
- Storage – Store any leftover agua fresca in the refrigerator in a sealed container for up to 2 days. Fresh flavor is best on the first day; separation may occur, so stir before serving.
