Place the cleaned parsley, freshly squeezed lime juice, cold water, and the first 1/3 cup of sugar into a blender. Blend on high until the mixture is completely smooth and uniformly green, about 30–45 seconds depending on the strength of your blender.

Taste and adjust sweetness. If you prefer a sweeter drink, add up to the remaining 1/6 cup (to reach 1/2 cup total) or sweeten to your liking with a teaspoon at a time, blending briefly between additions.

For a smoother, less pulpy texture, pour the blended mixture through a fine-mesh strainer or cheesecloth into a pitcher, pressing the solids to extract as much liquid as possible. If you prefer more texture and the natural green color, you can skip straining.

Chill the drink in the refrigerator or serve immediately over plenty of ice. Stir well before serving, as separation can occur if the drink is left to sit.
