Agua de Perejil is a bright, refreshing beverage made from fresh parsley, lime juice, water, and a touch of sweetness. Known for its lively citrus-herb profile, this drink is easy to prepare and ideal for hot days, light meals, or anytime you want a crisp, revitalizing option without caffeine.


The clean, slightly grassy flavor of parsley pairs beautifully with tart lime. Blending and then straining produces a smooth, pale green drink that’s cooling and restorative in texture. This recipe is simple to scale, and you can adjust sweetness, texture, and temperature to suit your taste.

Ingredients

Instructions

  • Place the cleaned parsley, freshly squeezed lime juice, cold water, and the first 1/3 cup of sugar into a blender. Blend on high until the mixture is completely smooth and uniformly green, about 30–45 seconds depending on the strength of your blender.
  • Taste and adjust sweetness. If you prefer a sweeter drink, add up to the remaining 1/6 cup (to reach 1/2 cup total) or sweeten to your liking with a teaspoon at a time, blending briefly between additions.
  • For a smoother, less pulpy texture, pour the blended mixture through a fine-mesh strainer or cheesecloth into a pitcher, pressing the solids to extract as much liquid as possible. If you prefer more texture and the natural green color, you can skip straining.
  • Chill the drink in the refrigerator or serve immediately over plenty of ice. Stir well before serving, as separation can occur if the drink is left to sit.
  • Garnish each glass with a lime wedge, a small parsley sprig, or a few mint leaves for added aroma. Enjoy cold.

  • Sweetness: Start with the lower amount of sugar and increase to taste. Alternative sweeteners such as honey or agave can be used—dissolve them briefly in a little warm water before mixing if needed.
  • Texture: Straining produces a light, clear drink that many find more refreshing. Leaving the blended solids in creates a more herbaceous, fuller-bodied beverage.
  • Temperature: Use cold water and plenty of ice for the freshest, most thirst-quenching experience. Chilling for 30 minutes in the fridge deepens the flavors slightly.
  • Storage: Store leftovers in a sealed container in the refrigerator for up to 24 hours. Stir or shake gently before serving, as natural separation may occur.
