Paloma Mocktail

Bright, refreshing, and elegantly simple, this alcohol-free Paloma Mocktail captures the citrus character of the classic cocktail without the spirits. Freshly squeezed grapefruit and lime juices give a lively tang, while a touch of simple syrup balances the acidity. Grapefruit-flavored sparkling water adds effervescence and a subtle bitterness, making this a light, thirst-quenching drink for warm afternoons, casual gatherings, or a flavorful non-alcoholic option for celebrations.

Equipment

  • Highball or Collins glasses
  • Measuring cups
  • Measuring spoons
  • Citrus juicer or reamer
  • Small spoon or stirrer

Ingredients

  • 1/4
    cup
    freshly squeezed grapefruit juice
  • 2
    tbsp
    freshly squeezed lime juice
  • 1/2
    tbsp
    simple syrup
adjust to taste; or substitute honey or agave
  • 1/4
    cup
    grapefruit-flavored sparkling water
  • Kosher salt
    for rimming the glass (optional)
  • Grapefruit slice
    for garnish
  • Ice
    as needed to chill

Instructions

  • Prepare the glass: run a grapefruit or lime wedge around the rim to moisten it, then gently dip the rim into a shallow plate of kosher salt until it is evenly coated. This step is optional but adds a classic contrast to the citrus flavors.
  • Fill the prepared glass with ice cubes. Using fresh juice yields the best flavor—squeeze the grapefruit and lime shortly before mixing to preserve aroma and brightness.
  • Pour the grapefruit juice, lime juice, and simple syrup over the ice. Stir gently for about 10–15 seconds to combine and chill the juices without flattening the bubbles you’ll add next.
  • Top the drink with grapefruit-flavored sparkling water, pouring slowly to retain fizz. Taste and adjust sweetness by adding a little more simple syrup if desired.
  • Garnish with a thin slice or wedge of grapefruit and serve immediately while the drink is cold and effervescent.

Notes & Tips

  • Use pink or ruby red grapefruit juice if you prefer a sweeter, more colorful drink. These varieties tend to be less tart than white grapefruit.
  • Sweeteners: simple syrup dissolves easily and blends smoothly into cold drinks. If you prefer natural sweeteners, swap with honey or agave, but note that these will slightly change the flavor profile.
  • Sparkling options: if you don’t have grapefruit-flavored sparkling water, plain sparkling water or club soda with a splash of grapefruit soda will work. Keep in mind that flavored sodas may add extra sweetness.
  • Make ahead: you can mix the citrus juices and simple syrup in advance and keep them chilled for up to 24 hours. Add ice and sparkling water just before serving to preserve carbonation.
  • Variations: for a spicier twist, muddle a slice of jalapeño or add a dash of ginger syrup. For a herbal note, try a sprig of fresh rosemary or basil as garnish.
  • Presentation: a lightly salted rim or a sugared rim offers two different flavor contrasts—salt emphasizes brightness, sugar emphasizes sweetness.
