Refresco de Mamey is a silky, tropical beverage built around the custard-like flesh of the mamey fruit. Smooth and subtly sweet, this drink blends ripe mamey with milk, a touch of honey and vanilla for aromatics. Ingredients
- 1/2 large mamey, or 1 small mamey, peeled and seeded
- 5 cups milk of choice, dairy, almond, oat, or other plant milk
- 2 tsp vanilla extract
- 2 tsp honey, or maple syrup to taste
- Ice, for serving

Prepare the mamey: cut the fruit in half, remove the large seed, and scoop the flesh into a bowl. Use only the soft, ripe orange flesh.

Place the mamey flesh into the blender. Add the vanilla, honey, and half (about 2 1/2 cups) of the milk to start.

Blend on high until the mixture is completely smooth and creamy, stopping to scrape down the sides if needed. For a thicker texture, blend with a few ice cubes or frozen mamey chunks.

Optional: strain the blended mixture through a fine mesh sieve into a pitcher for an ultra-smooth drink, especially if your blender leaves small fibers.

Add the remaining milk to the pitcher and gently stir to combine. Taste and adjust sweetness with more honey or syrup if desired.

Serve over plenty of ice and enjoy immediately. Garnish with a light dusting of cinnamon or a thin slice of mamey if you like.

- Choose ripe fruit: a ripe mamey yields the best flavor and texture. The skin should give slightly when pressed, and the flesh should be soft and fragrant.
- Adjust sweetness: honey is suggested, but you can use maple syrup, agave, or a little granulated sugar. Taste before serving and add sweetener a teaspoon at a time.
