Chicken Thighs are SO Good

We recommend chicken thighs for this Moroccan-style Instant Pot recipe because they have a little more fat than breasts, which creates a richer, more complex sauce and more tender meat after pressure cooking. Use bone-in or boneless thighs—both turn out juicy and flavorful. After cooking you can shred the chicken to soak up the sauce or serve whole pieces if you prefer.

Why Make This Dish?

This Instant Pot Moroccan chicken is a multi-component meal (sweet potatoes, couscous, and chicken) but the effort is rewarded with a layered, satisfying plate. The recipe is flexible—swap sides to suit your diet or preferences.

  • The sauce that forms in the pot is concentrated with aromatic spices and combines beautifully with shredded chicken.
  • Shredded chicken absorbs the sauce and becomes incredibly flavorful.
  • Serve the chicken with roasted vegetables or a low-carb alternative to make it keto-friendly.
  • The couscous is brightened with fresh herbs, lemon zest, and lemon juice; you can substitute cauliflower rice or quinoa if you prefer.

Tips & Tricks for Instant Pot Moroccan Chicken

Timing matters. If preparing sweet potatoes, chicken, and couscous, start with the sweet potatoes since they take the longest. While they roast, sear and pressure-cook the chicken, then finish the couscous just before serving.

Use the sauté function. Searing the chicken skin-side down in the Instant Pot before pressure cooking adds texture and develops fond—those browned bits are the base of the sauce once you deglaze and add the remaining ingredients.

Vegetable substitutions. This dish pairs well with many roasted vegetables: broccoli, cauliflower, potatoes, onions, or peppers all work. For a keto variation, swap the sweet potatoes for broccoli and the couscous for cauliflower rice.

Spice up dinner this week with this Instant Pot Moroccan Chicken

Ingredients

Sweet Potatoes

  • 2 large sweet potatoes, cubed
  • 1/2 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 tablespoon chili powder

Chicken

  • 1.5 lbs chicken thighs (about 4–5 thighs)
  • 1 tablespoon ground cumin
  • 1 teaspoon turmeric
  • 1 teaspoon ground ginger
  • 1.5 teaspoons garlic powder
  • 1/2 tablespoon chili powder
  • 1/2 teaspoon cayenne (adjust to taste)
  • 1/8 teaspoon salt
  • 1/3 cup raisins
  • 1/2 cup chopped green olives
  • 1/2 cup chicken broth
  • 1 white onion, chopped
  • 3 tablespoons olive oil (for cooking)

Couscous

  • 1 cup water
  • 1 cup couscous, uncooked
  • Zest of 1 lemon
  • 2 tablespoons lemon juice
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped

Optional Toppings

  • Feta cheese
  • Pistachios

Instructions

  1. Preheat the oven to 400°F (205°C). On a baking sheet, toss the cubed sweet potatoes with 1/2 tablespoon olive oil, garlic powder, and chili powder. Roast 20–25 minutes until tender and lightly browned.
  2. In a large bowl, combine cumin, turmeric, ground ginger, garlic powder, chili powder, cayenne, and salt. Add the chicken thighs and rub the spice blend over each piece until evenly coated. Set aside.
  3. Turn the Instant Pot to the sauté setting. When hot, add 2 tablespoons olive oil. Place chicken thighs skin-side down and sear 2–3 minutes per side until the skin is browned, then remove the thighs and set aside.
  4. Add the chopped onion, raisins, chopped olives, and chicken broth into the pot and stir to deglaze, scraping up any browned bits. Return the chicken to the pot, arranging it on top of the mixture. Seal the lid and set to Manual/High Pressure for 10 minutes.
  5. While the chicken cooks, prepare the couscous. Bring 1 cup water to a boil, remove from heat, stir in the couscous, cover, and let sit 5 minutes. Fluff with a fork, then stir in lemon zest, lemon juice, parsley, and cilantro. Set aside.
  6. When the Instant Pot finishes, allow the pressure to release naturally. This typically takes 5–10 minutes—wait until the pin drops before opening the lid.
  7. Remove the chicken, discard skin and bones if desired, and shred the meat with two forks. Return the shredded chicken to the pot and stir into the sauce so it soaks up the juices.
  8. Serve the shredded Moroccan chicken with roasted sweet potatoes and herbed couscous. Top with crumbled feta and chopped pistachios if you like. For a keto meal, serve with roasted broccoli and cauliflower rice instead of couscous and sweet potatoes.
