Are you still trying to decide what healthy breakfast casserole to serve for a holiday brunch or busy weekday morning? This Spicy Italian Sausage Breakfast Casserole is an excellent make-ahead option: flavorful, adaptable, and crowd-pleasing. It bakes easily, travels well, and can be prepared the night before so you can focus on guests and celebration instead of rushing in the morning.

Easy holiday breakfast idea
This Spicy Italian Sausage Egg Bake is one of my go-to holiday breakfast dishes for many reasons:
- Make it the night before and bake it in the morning—no last-minute prep when guests arrive.
- It’s highly flexible: swap peppers for whatever vegetables you have on hand, such as mushrooms, zucchini, or spinach.
- To make it gluten-free, omit the bread and use roasted sweet potatoes instead.
- For a vegetarian version, skip the sausage and add extra vegetables or sautéed mushrooms and a plant-based protein.
Not only does preparing this casserole ahead of time reduce holiday stress, but the flavors—especially the combination of goat cheese and sun-dried tomatoes—become even better after resting overnight. It’s a family favorite and has become part of our holiday tradition.
Step one: bake and prep your veggies
You can choose the bread and potato variety you prefer. I generally use bakery sourdough and a large Idaho potato, but country or whole-grain bread and sweet potatoes are great alternatives. Roast the diced potato and toast the bread squares briefly so they hold their shape in the casserole. Preparing these elements ahead ensures an evenly textured final dish.

Step two: sauté veggies and assemble the casserole
Sauté onions, garlic, and peppers until softened to build rich flavor. You can easily swap in other vegetables—mushrooms, eggplant, or cauliflower all work well. Brown the Italian sausage separately and add it to the casserole dish. Stir in the roasted potatoes, toasted bread cubes, sun-dried tomatoes, and a splash of olive oil, then season with salt and pepper. Mix gently so the ingredients are evenly distributed.

Step three: crack those eggs
You have two options for baking:
- Crack the eggs over the assembled casserole and bake immediately.
- Cover and refrigerate overnight, then crack the eggs and bake in the morning. Letting the casserole rest overnight helps the bread soak up flavors and creates a more cohesive texture—this is my preferred method.

Step four: top with goat cheese and enjoy
After baking, scatter crumbled goat cheese over the top while the casserole is hot so it softens and adds tangy creaminess. Optionally drizzle a bit of balsamic vinaigrette just before serving for a bright finish. Serve warm with simple sides like fresh fruit, a green salad, or crusty bread.

This make-ahead, savory egg bake combines Italian sausage, roasted potatoes, sourdough, peppers, sun-dried tomatoes, and creamy goat cheese. It’s ideal for holiday brunches, weekend gatherings, or any time you want an easy, satisfying breakfast casserole.
Ingredients
- 1 large Idaho potato, diced
- 1/2 loaf bakery sourdough bread, chopped into 2-inch squares (~4 cups)
- 2 tablespoons olive oil (or the oil from sun-dried tomatoes)
- 1/2 pound Italian sausage
- 1 purple onion, diced
- 1 tablespoon minced garlic
- 1 medium red pepper, chopped
- 1 medium green pepper, chopped
- 4 oz. sun-dried tomatoes (preferably packed in oil), chopped
- 4 oz. goat cheese, crumbled
- Salt and pepper, to taste
- 8 large eggs
Instructions
- Preheat oven to 400°F (200°C). Grease a 9 x 13-inch casserole dish with nonstick spray or a little oil.
- On a baking sheet, spread the diced potato on one side and the bread cubes on the other. Drizzle with 2 tablespoons olive oil. Bake 10 minutes.
- Remove the sheet, transfer the bread squares to the greased casserole dish, and return the potatoes to the oven for another 10 minutes until tender and golden.
- Meanwhile, heat a skillet over medium-high heat. Brown the Italian sausage until cooked through and no longer pink. Add the cooked sausage to the casserole dish.
- In the same skillet, sauté onion for 1–2 minutes. Add garlic, red pepper, and green pepper and cook an additional 2 minutes until softened. Add the vegetable mixture to the casserole dish.
- Reduce oven temperature to 350°F (175°C). Add roasted potatoes, sun-dried tomatoes, and any remaining olive oil to the casserole and gently combine all ingredients.
- Cover and refrigerate overnight for best flavor and texture, or proceed to the next step to bake immediately.
- When ready to bake, crack the 8 eggs evenly over the casserole and sprinkle with crumbled goat cheese. Season with salt and pepper to taste.
- Cover with foil and bake 15 minutes. Remove foil and bake another 10–15 minutes until eggs are set to your liking (less time for runny yolks).
- Let rest a few minutes, then slice and serve warm.
Variations and tips
- Gluten-free: replace bread with roasted sweet potatoes or extra diced potatoes.
- Vegetarian: omit sausage and add sautéed mushrooms, spinach, or extra peppers.
- Make ahead: assemble the night before and refrigerate for deeper flavor and easier morning prep.
- Cheese alternatives: feta, mozzarella, or cheddar all pair well with the sun-dried tomatoes and sausage.
- Adjust heat by using spicy or mild Italian sausage, or add red pepper flakes if you like more kick.
