Ingredients

  • ¼ cup olive oil
  • 2 tablespoons tomato paste
  • ½ medium white onion, diced
  • 1 teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 10 oz cherry tomatoes
  • 1 head garlic (about 10 cloves)
  • 2 pucks Boursin cheese (any flavor)
  • For serving: additional olive oil, red pepper flakes, minced fresh chives

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In an 8×8-inch baking dish, whisk together the olive oil and tomato paste until smooth.
  3. Trim the tip off the head of garlic so the cloves stay together but the tops are exposed. Add the diced onion, salt, pepper, cherry tomatoes and the trimmed garlic to the dish. Toss gently to coat everything in the oil and tomato paste mixture.
  4. Nestle the two Boursin pucks among the tomatoes. Cover the dish with foil or an oven-safe lid and bake for 25–30 minutes, or until the tomatoes have burst and the cheese begins to brown.
  5. Remove from the oven. Carefully squeeze the roasted garlic cloves out of the head and mash them with a fork together with the tomatoes and softened cheese. Stir until well combined and creamy.
  6. Finish with a drizzle of olive oil, a sprinkle of red pepper flakes and minced fresh chives. Serve warm with crostini, crackers or vegetables.

Tips & Notes

  • Garlic & chive Boursin is recommended for its complementary herb notes, but any Boursin flavor will work.
  • Goat cheese logs make an excellent substitute if Boursin isn’t available; the dip will be tangier but still delicious.
